Ingredients

  • PUFFS PASTE :

    Put the water, the butter cut into small pieces and the salt in a saucepan. Bring to the boil very gently to allow the butter to melt.

    As soon as it starts to boil, remove the pan from the heat and add the flour all at once, then mix quickly with a wooden spatula. When the mixture is smooth, return the pan to a low heat, stirring constantly until a compact ball forms.

    Transfer the dough to a bowl and add the first whole egg, stirring constantly. When the first egg is incorporated, add the second and then proceed in this way until the fourth egg is incorporated.

    Fill a piping bag with the dough. Place on a baking sheet in the desired shape. Brown the pastry with the 5th egg. Bake in a hot oven (180°) with static heat for 35/40 minutes. Do not open the oven door during baking.

    Mix the praline with the whipping cream - cream to be poured in two batches

  • PRALINE CREAM

    Whisk together the sugar and egg yolks + add the maïzena. Bring the milk to the boil, add in two batches - whisk and return to a low heat until thickened. 

    Add the gelatine sheet, wrung out, and the praline.

    Place in a bowl, leave to cool, add the butter in pieces and blend.

    Whisk again when taken out of the fridge
