Lemon ice cream

30 cl full cream

250 g icing sugar

8 cl fresh lemon juice

Zest of 3 lemons

Mix the icing sugar and lemon juice in a bowl until smooth.

Grate the zest of 3 lemons

Whisk the cream until it thickens. Add the icing sugar-lemon mixture and zest and continue whisking.

Place the cream in a glass ice-cream tub and leave to set in the freezer for 6 to 8 hours.
