Peel the onion and sweet potatoes.
Chop the onion and cut the sweet potatoes in big pieces.
Pour the oil in a pan and sweat the onion, and sweet potatoes without coloring.
Add the milk, the water and the salt. Bring to a boil and let it simmer until sweet potatoes is cooked.
After cooking, drain the whole, keeping the cooking juice.
Blend the purée, adding the butter and cooking juices if necessary, depending on the desired texture
Adjust the seasoning and then serve with a dash of walnut oil (optional).
